At present, there are many kinds of non-stick pots on the market, such as wheat stone non-stick pots, metal coated non-stick pots and so on. But in the final analysis, the basic non-stick pot coatings are the same, that is, Teflon.
Teflon, also known as the "King of Plastics", chemical formula - (CF2-CF2) n -, from the name of the King of Plastics can be seen that PTFE is a very good performance of plastics, it is very stable, 300 degrees at almost no chemical and physical changes; it is very corrosion-resistant, and hardly reacts with all the common acids and bases; it is very smooth, There is a very strong non-sticking, oil and water and so on will not adhere to his surface; he is very healthy; at room temperature, the human body will not digest and absorb him even a little bit, almost no impact on the human body.
Because of these characteristics of Teflon, Teflon is widely used in industry and life. For example, the commonly used sealed raw material belt is Teflon. The acid and alkali containers and pipes in many chemical plants are Teflon. Almost all the non-sticking coatings of non-sticking pots are Teflon. Cooking in non-stick pan, low fume, not easy to paste the pan, easy to wash, really easy to use.
However, the advantages of Teflon have one premise, that is, the temperature does not exceed 300 degrees. So, is it possible for us to cook more than 300 degrees Celsius every day?
First of all, we need to know that the boiling point of general cooking oil is between 200 degrees and 300 degrees, that is, if the limit heating, the temperature may exceed 300 degrees, but generally speaking, the frying temperature is between 170 degrees and 240 degrees, not more than 300 degrees, so the frying temperature generally does not allow the decomposition of Teflon. So the normal use of fried rapeseed or boiled food is absolutely no problem.
But the temperature of natural gas and gas flame can reach about 800-1400 degrees, which is much higher than the temperature of decomposition of Teflon by heating. If the pot does not stick to dry for a long time, decomposition may occur without coating.
So what happens when Teflon is superheated and decomposed? Teflon also produces highly toxic by-products such as fluorophosgene and perfluoroisobutylene during pyrolysis at high temperature, which is very terrible. The content and toxicity often increase with the increase of heating temperature. Inhalation of pyrolysis products can cause poisoning. The mild cases showed fever and cold-like symptoms, while the severe cases showed respiratory irritation symptoms, chemical bronchitis, pneumonia, and even pulmonary edema and myocardial damage. Long-term exposure to pyrolysis products at low concentrations often leads to headache, dizziness, insomnia, nightmares, memory loss, fatigue, back pain, etc.
In addition, although there are many kinds of non-stick pots, what is non-stick coating and non-stick coating, but as far as I know, almost all non-stick pots are non-stick coating of Teflon, which are all propaganda gimmicks. At present, there is no suitable substitute for Teflon non-stick coating. Like what is now the fire of a certain stone non-stick pot or something, he just looks like a certain stone, not a certain stone at all, the above non-stick coating, or Teflon, a certain stone itself has no non-stick role.
The conclusion is that under normal circumstances, non-stick pot is very good and can also be used, but do not dry-burn for a long time and contact with open fire. The decomposition products after non-stick coating contact with open fire are terrible.
